For the 2013 competition, each college may enter a maximum of three teams. Each team needs to include 2 students, one for a front of house role and the second a chef role. They may be helped by a commis at the heat, ideally a first year student. The brief for the students is:
You are owners of a small catering company responsible for the foodservice within an office block. You serve breakfast for those employees starting the day early and offer a lunch service for 200 employees each day, Monday to Friday. You are known for fine food and attentive service but also for the fact that you understand the needs of diners at work. For this year's Nestlé Toque d'Or® your concept will reflect an understanding of dining in the work place, you will create a two course lunch menu that is accompanied by a coffee drink.
Your company will have considered sustainability & nutrition. Prior to competing in your heat you will give a 10 minute presentation to the judges about your entry, which should include a slide on the nutrition being provided by your lunch and some thought about sustainability. (This could include thoughts on anything from sourcing, reducing waste, energy, water or the social aspects e.g. if sourcing ingredients from abroad, are there any social benefits to the local communities?)
